Fresh Finds: Spicy veggie salad with datil pepper dressing recipe

JACKSONVILLE, Fla. – Every week News4JAX teams up with the Blue Zones Project Jacksonville to show off local, healthy food options as part of our Fresh Finds series.

MJ, manager of Murray Hill Farmers Market, joined us in studio on Wednesday to share more about the market’s core values:

MJ also shared a recipe for a spicy veggie salad with datil pepper dressing, which is not only colorful and flavorful but also packed with vitamins, minerals, and antioxidants from the various vegetables.

MJ says you can adjust the quantities of each ingredient to suit your taste preferences and the number of servings you need.

Ingredients

  • Lettuce, torn into bite-sized pieces
  • Cauliflower, chopped into small florets
  • Carrots, grated
  • Kale, chopped
  • Squash (such as zucchini or yellow squash), thinly sliced
  • Datil peppers, finely chopped (adjust quantity based on desired spice level)
  • Olive oil
  • Lemon juice
  • Salt and pepper to taste
  • Optional: roasted pumpkin seeds or nuts for garnish

Instructions

  • In a large bowl, combine the torn lettuce, chopped cauliflower, grated carrots, chopped kale and sliced squash.
  • In a separate bowl, whisk together olive oil, lemon juice, chopped datil peppers, salt and pepper to make the dressing. Adjust the seasoning and spiciness according to your preference.
  • Let the salad sit for a few minutes to allow the flavors to meld together.
  • Serve the salad garnished with roasted pumpkin seeds or nuts, if desired.
  • Enjoy your spicy veggie creation!
